Whole 30, Day 5 - On Top of the World
Day five started with a big Saturday breakfast. I made bacon as a special treat, and then I made a super yummy "home fries" which consisted of jicama and onions fried in bacon drippings. I just peeled and chopped the jicama and steamed it until it was almost fork tender, then threw it in the drippings with a chopped onion. We topped it with an unsweetened ketchup I found at the health food store and seriously, I was as happy with this as I would have been with a plate full of fried spuds from my favorite dive diner- happier, really, since I know this is better for me!
After that, the kids and I headed out for a hike. See that white water tower in the distance? That's our destination.
My dad sent Tucker this explorer's vest and his own big boy binoculars for Christmas, and he was in full adventure mode. It really slowed down our pace, but it was so adorable I couldn't complain. I also let him use my little camera, and I am sure there are some gems on there which I will share when I get around to figuring out how to get uploaded pictures on my blog again- in the meantime, these are all taken with my phone and imported through google +.

Destination reached!
From the top there is a great view of my area. For those of you familiar with Rancho San Diego, that's Target and it's surrounding stores down there.
Me at the top, feeling on top of the world. I was super high energy today, feeling very positive and healthy and properly fueled and hopefully over the initial hump of adjusting!

After that we came home and I showered and ate and then we headed to the mall to visit the Lego store. As one of his Christmas presents we gave Tucker a certificate to go and build three minifigures. They have a cool table with bins of heads, bodies, legs, hair and hats, and accessories and you can create your own guys. We figured he'd like the experience better than just being given more legos, and we were right. That kid sure does love Legos.
We came home and I put some frozen bananas in the Ninja with a few scoops of cocoa and had some "soft serve" and relaxed...
Now it's just about time for dinner and I am making a ground beef and sweet potato hash. What's on your plate tonight?

Looks like you are getting into the groove of the new plan. Quite a hike you guys all took. And OMG - Tucker is adorable in that gear.
second Jaysa on Tucker looking so cute. OMG when I saw the picture I thought you'd slipped off and ate a big plate of potatoes! so good looking.
